Recipe: Baked Berry French Toast
Cary, NC — Just like everybody else, I was snow-bound starting at mid-day Wednesday, February 12, so I started looking for recipes that would give me comfort during what is now being called “Snow-mageddon” and #snOMG.
Recipe: Baked Berry French Toast
Pinterest is the best place to find great recipes and you can “pin” them for use later. I found a recipe for “Baked Berry French Toast” that I then adapted to my family’s tastes and the ingredients we had on hand.
Mainly you need bread, milk and eggs. The whole process takes about an hour, makes your house smell wonderful and gives everyone a nice warm start to the day, whatever the weather.
Ingredients:
- 1 T vegetable oil
- 6 slices of your favorite bread (I used a multi-grain)
- 4 eggs
- 1/3 C maple syrup
- 3/4 C 1% milk
- 2 C berries of your choice (I used blackberries and strawberries)
- 1 tsp ground nutmeg
- 1/2 tsp ground cinnamon
To Make:
- Preheat oven to 350 degrees.
- Coat an 8″ square baking dish with the oil on all sides and bottom
- Toast the bread slices, then layer and press these into the baking pan making a nice even layer.
- Whisk together the eggs, milk, and maple syrup. Whisk in the spices.
- Pour liquid evenly over the bread
- Wash and slice the berries to bite size pieces. Scatter these evenly over the bread mixture
- Place in the middle rack of the oven and bake for 50 minutes.
- Serve with additional maple syrup or (my favorite) raspberry jam or apricot preserves
This comfortably served my family of 4.
About 350 calories per serving (depending on the bread you use)
Even if we don’t get another Snow-mageddon this year, your family is sure to enjoy this recipe for Baked Berry French Toast.
