Cary, NC — These delicious lemon bars are an unexpected dessert that will impress people at parties, dinners, get-togethers – you name it. They look and taste like something you’d find at a bakery, but, in reality, they’re so simple and easy to make. 

Lemon Bars

I’ll admit that I am usually not a big fan of lemon-flavored pastries and desserts – but these I will eat. It must be the fresh lemon juice that makes them so good. This recipe is simple, too – with a few ingredients that you likely already have at home and basic instructions, making these is a lot easier than one might think. So try them out next time you’ve committed yourself to bringing a snack to share at a get-together. I guarantee that they will be a hit.

Ingredients

Crust:

2 sticks softened butter
2 cups flour
1/2 cup powdered sugar

Lemon Topping:

1/2 cup freshly squeezed lemon juice
4 eggs
2 cups sugar
1 teaspoon baking powder
1/4 cup flour
Powdered sugar

Directions

For Crust:

Cream butter and sugar.
Add flour and gently combine, just until crust holds together.
Press into greased 9 x 13″ pan.
Bake at 350 for 15 minutes until crust is golden, not browned.

For Lemon Topping:

Mix together lemon juice, eggs, sugar, baking powder and flour.
Pour over crust.
Bake an additional 20-25 minutes at 350.
Remove from oven; cool.
Sprinkle with powdered sugar and cut into squares.

This recipe yields 24 squares.

Tips for After-Baking

Unless you’re serving these right away, store them in the refrigerator to help keep them firm. Cut them before you refrigerate them, though – it’s a lot easier that way.
