Recipe: High Protein Cookies

Cary, NC – I don’t know about you, but I’ve been working hard to shed some holiday pounds. Between New Years, football and Valentine’s, it’s been sweet eats!
The problem is, I am still craving sugar and chocolate. My kids also like cookies and sweets and I always have something in the pantry for them. But how do I keep myself from indulging?
Here is a cookie recipe that is high in protein and low in sugar. I hoard these just for myself.
Chocolate / Peanut Butter Whey Protein Cookies
- 6 egg whites
- 1 3/4 cups oatmeal
- 2 tsp brown sugar substitute (Sugar Twin)
- 1/2 cup crunchy all natural peanut butter
- 4 scoops chocolate whey protein powder
- 2 dashes cinnamon
- 1 tsp virgin olive oil
- 1 tsp maple extract
- 1/2 cup raisins (optional)
Pre-heat oven to 325. Drop cookies on greased baking sheet. Bake for 20 minutes. Makes 1 dozen cookies…each cookie has 14g of protein.
Personally I like to substitute semi-sweet chocolate chips for the raisins. That way I get my chocolate fix in a much “better-for-me” form. Now I can go back to doing crunches and push-ups and have a yummy protein snack when I’m done.
